There is only one way to keep the bud on the rice grain: don’t take it away! Carnaroli rice with the bud is subjected to a smooth processing that leaves the grains roughest, preserve the proteins, the vitamins, the mineral salts and the enzymes that are in the external layer of the grain and most of all in the bud, and allowing for the rice to be capable of absorbing liquids after cooking, without flaking.

If you try it simply boiled, you will see the bud grow and you will feel the perfumes of our Carnaroli. If you use it to make a risotto, you will appreciate the extraordinary absorbing capacity without dividing the liquids after the cooking, without exfoliating, even for several minutes before serving.
